Could you please provide me with info on chicory and when and how to harvest and roast it?
Harvest the roots in the fall of the year you planted the seeds. Wash, cut up, dry and roast the pieces lightly. If you want bitter coffee, roast it darker. You can experiment to get your favourite taste. You can also harvest them in early spring, but any later will give you a skinny, bitter root.
To get a dual purpose product you can plant Belgian endive, harvest the roots in the fall, cut off the leaves, bury the roots upright in a bucket of moist sand. Harvest the tender buds for salad when they grow, then cut up the roots, dry and roast for coffee.
